Alberta

The westernmost of Canada’s three Prairie Provinces, Alberta squeezes itself between British Columbia and Saskatchewan, directly above Montana. It is also one of only two entirely landlocked Canadian provinces. Alberta is named after one of Queen Victoria’s daughters, Princess Louise Caroline Alberta. Early Western arrivals to Alberta were fur traders. Only after railroads were built across the prairies did settlements begin to take hold here. French, Scandinavian, Ukrainian, and German settlers headed west to take on the prairie land. Southwestern Alberta marks the transition point where the Canadian Rockies flatten out into the plains. In the 1800s, the plains were killing fields for bison, whose hides and tongues were prized. Though bison are making a comeback, the rangeland around Alberta is now cattle country. Half of Canada’s beef comes from Alberta. Calgary is nicknamed Cowtown and plays host to the world’s biggest outdoor rodeo, the Calgary Stampede. Beekeeping is another important industry. Beyond honey production, the bees keep Alberta’s canola fields pollinated. Fishing and hunting for moose, deer, ducks, geese, walleye, pike, and trout are important in Alberta.

Sweet Potato Pie I

Reviewed on Dec. 4, 2008 by Duckball
Having never eaten sweet potato pie and knowing my husband hates it, I wasn't sure what to expect... Especially when the sweet potatoes were all stringy when mixed with the other ingredients. But I pressed on! I used about 3/4 of a 29-oz can of sweet potatoes in place of fresh, and I followed the rest of the recipe exactly... Until my hand mixer died mid-recipe. Not wanting to dirty another bowl, I didn't use the stand mixer and instead used a whisk to make sure everything was well-blended. And this was awesome! I think I might like it as much as (or may more than) pumpkin pie. So good, but no one else would touch it (my daughter remembered the stringiness of the uncooked filling!). Oh, well, more for me. Thanks for sharing, Cougaar!

After-Thanksgiving Turkey Soup

Reviewed on Dec. 4, 2008 by Duckball
This was so good. It did make a lot of soup, so it took about six days for the three of us to finish the pot, but it was good. I added lots of extra kosher salt (it needed it), I only used around 2 TBS butter, I omitted the flour and used potato flakes to thicken it up, and I used around 2 cups of uncooked bow ties in place of rice. It was so yummy, especially with a spoonful of sour cream mixed in! Thanks for sharing, Valorie!
