Although the cuisines of France and Italy are the most well-known, serious eaters should venture off of Europe’s culinary beaten-path to experience more of the continent’s exceptionally varied fare. Shaped in part by climate and available natural resources, every European country enjoys its own distinctive cooking style and signature dishes. In the warm, temperate south, Mediterranean flavors prevail, with olive oil and a wide variety of seafood, vegetables, and legumes often featured in regional specialties. Moving north -- to areas with harsher winter climates -- hearty, comforting dishes, and preserved foods, like pickled vegetables and smoked fish, are commonly eaten.

Easy Mexican Rice

The only things I did differently were to use canned corn instead of kidney beans, and I sprinkled the shredded lettuce on top. I served it with Chicken Flautas from this site. A nice meal! Thanks!

Chicken Flautas

I think, as written, this would have been pretty bland, so I spiced it up a bit. First, I boiled the chicken breasts in water seasoned with Adobo, garlic, and Chipotle powders. I added a finely-diced jalapeno to the chicken mixture, and I used a combination of queso fresco and a Mexican four cheese blend. I found the tortillas difficult to roll up - they tended to crack really easily. This turned out ok, but it was rather a lot of work.

Apple Oatmeal Cookies II

very healthy and inobtrusively so; a pity only hubby an I did appreciate. My kids were not impressed. I'll keep this recipe anyway, because this cookie is basically good and can stay very moist for some days. Some may like it sweeter, but I think it's ok.
