Pacific Islands

Some of the last land areas on the planet to be settled by humans, the Pacific Islands are comprised of hundreds of islands strewn across thousands of miles of ocean. Courageous island hoppers headed out on open boats, bringing staple foods with them, to settle these remote islands. Island cuisines are often a melding of native, European, Asian, and American traditions. Starchy staples (like taro, yam, and green bananas) comprise the mainstay of most island diets. Fresh fruit is important, too, eaten out of hand or worked into juices. As might be expected, seafood is a major protein for many islanders (often stewed or roasted), although pork is popular, too. Increasingly, Western diets are becoming common on many islands of the Pacific.

Perfect Pumpkin Pie

The title says it all, this is the "perfect pumpkin pie". I made pumpkin pie last year using the pumpkin pie mix in a can and was very disappointed. This recipe however gave me hope and everyone who tried it loved it. This recipe is a keeper and I will be making it again and again years to come. The only additions I made to the recipe was that I added a tad bit more spices and added a teaspoon of vanilla extract.

Country Pumpkin Muffins

the raw batter was delicious, and so was the baked one... but i could feel the sweetness between my teeth with each bite i take. i made two batches. with and without nuts. i prefer the one without... and the raisins were very complimenting.

Sweetened Condensed Milk

This is a fantastic recipe and so easy! I didn't have any regular powdered milk, so I used the powdered vanilla coffee creamer I had in the cuboard and it turnes out delicious! I used it for "Brown Family's Favorite Pumpkin Pie" from this site and the result was mouth watering to say the least! Thank you so much!!
