Cherry Spinach Salad

This salad was excellent. I used dried cranberries because that's what I had on hand and it was delicious. What a great way for me to get the Hubbster to eat spinach.

Cool Whip® Banana Split Pie

Hubby is diabetic so I made several changes for him. I lined the crust with thin sliced banana, then I put on chocolate sugar free pudding, more banana and then the berries and topped with sugar free cool whip, sugar free caramel and chocolate topping and then chopped almonds. We really enjoyed this and will make it often.

Grilled Portobello Mushrooms

These were fantastic. I used olive oil and red wine vinegar as that is all I had on hand. Grilled over super hot coals for appx. 7 minutes. We enjoyed every bite!
