Cheesy Ham and Hash Brown Casserole

Tasty! I didn't end up having cream of potato soup, so I made due with 1 can cream of celery and 1 can cheddar soup. I will certainly be making this again and will try it as written. I did also double the ham since it was being served as supper.

Green Bean Turkey Bake

I realized when I got home from Thanksgiving that whoever had packaged the leftovers at our huge family gathering hadn't given me any gravy! What's up with that? So I decided to try this recipe to use up my gravy-less potatoes and turkey. And well, it's not gourmet, but it's definitely comfort food on a blustery day like today. I didn't thaw my green beans, which was fine. I microwaved the first mixture for 4 and a half minutes, then topped it with cold potatoes and microwaved another 4 minutes, and it's not piping hot, so I might warm it up some more. Make sure to season this generously with salt and pepper!

Quinoa and Black Beans

My dad and husband loved this dish and my dad hates anything "foreign." I found it too spicy for my liking, but I am a wimp. I left out the cayenne and the spice was still just too much for me.
