Crawfish Thermidor

Reviewed: Aug. 28, 2008
Yesterday I bought a lb. of cooked crawfish because it was 2.99 as opposed to 1 lb. of shrimp for 4.99. I knew I'd find a recipe from this site. I didn't know the cooked crawfish had to peeled which revealed very little meat. Although I didn't have a ramekin, I just kept adding the ingredients in a large skillet to make a crawfish sauce. It has a mild spicy taste. I served it over brown rice (it looks better than white rice since the sauce is white). I saved a whole crawfish to put on the dinner plate for decor.

Sugared Rhubarb Muffins

Reviewed: Aug. 28, 2008
These muffins were very good. I made a double batch and made large muffins. They were very good but quite white and insipid looking. I have made them again and twisted the recipe a bit and like the looks of them much more. Thanks for the delicious recipe.

Gobble Up Granola Snacks

Reviewed: Aug. 28, 2008
I pretty much followed the recipe other than adding my own fruit. I had no problem with the quantity of corn syrup (next time I'll try honey), and the fruit. I used smooth peanut butter, and added dried cherries, chocolate chips, raisins and walnuts. I would like to try some of these choices: honey, more vanilla, coconut, craisins, and apricots. I used wax paper to pat down instead of my hand. It took me about 25 minutes to make. Make sure you use a big bowl for hand mixing. Also my batch made 20 squares.

World's Best Lasagna

Reviewed: Aug. 28, 2008
Very, very, very good! Even better the next day! I think that I might agree with another reviewer when she stated to let the lasagna sit in the refrigerator over night, let it sit out for an hour and then bake it as directed. Either way though, it is a great recipe thanks!

Easy Corn Chowder I

Reviewed: Aug. 28, 2008
Very tasty, easy recipe. Only change I made was using kernal corn instead of cream-style. Had corn from our farmer's market I wanted to use. Highly recommend.

Chocolate Pretzel Rings

Reviewed: Aug. 28, 2008
I used the square "snaps" because I thought it gave the chocolate something to hold onto, plus I really love the crispness. I used milk chocolate kisses with peanut butter M&Ms and they are very good. I'm sending them to school with my daughter for her "star student" treat to share with the class. Just enough to be a treat, but not too much.

Refried Beans Without the Refry

Reviewed: Aug. 28, 2008
Great recipe. I didnt use a crock pot. I soaked the beans for 4 hours. After soaking the beans I out al the ingredients in to a medium pot on medium-high heat for 2 hours. Mashed them up and my family couldnt believe refried beans could taste so good. They hated refried beans until now. Thanks.

Enchiladas

Reviewed: Aug. 28, 2008
I followed suggestions from others and seasoned the ground beef. I did not care for the brand of canned enchilada sauce i used so next time i will make from scratch. Tasty and simple to make!

Pink Grapefruit Sorbet

Very delicious! It tastes exactly like the best pink grapefruit you ever had only better! I made it with 1/2 sugar and 1/2 Splenda to cut down on the calories and no one could tell.

Extreme Banana Nut Bread 'EBNB'

Reviewed: Aug. 28, 2008
Out of the many banana bread recipe that I've used in the past, this one takes the cake. It was by far the most flavorful and delicious. I substituted one cup of white sugar for brown sugar, added a tsp of vanilla extract, and used pecans instead of walnuts because I didn't have any. I also used a bundt cake pan instead of bread pans which worked great, I just reduced the temperature of the oven a little and kept it in for 10-15 minutes longer, keeping an eye on it. I just made this yesterday and already it's almost gone. It toasts in the toaster beautifully but is just as good untoasted. Excellent banana bread!!

New Jersey Diner Salad

Reviewed: Aug. 28, 2008
actually i didn't find this to be bland at all. i substituted red wine vinegar (that was all i had) and cut the amounts down, as i only needed about half this recipe, but my husband and i really loved it. used it as a topping for grilled brats. great recipe. :)
