Candied Sweet Potatoes

These candied sweet potatoes were to DIE for! Sweet but not too sweet. Super easy to make... kids DEVOURED them! Grownups enjoyed them too! This recipe replaces my old sweet potato recipe!

Cheesy Creamed Spinach

FINALLY! A DELICIOUS CREAMED SPINACH RECEIPE!!! Very flavorful.. not at all bitter---- flavors mingled nicely... not overpowered by one flavor... kids LOVED this! I really wrung the heck out of the cooked spinach... very important! Also... I am watching my fat and only added a 1/4 cup of heavy cream... FAB-U-LOUS!

Pumpkin Maple Pie Supreme

This pie was sensational! It has a wonderfully light custard quality... ate the last piece today (six days after Thanksgiving) and it was wonderful! I mistakenly baked it at 375 degrees... and the top bubbled and carmelized adding a nice crunchy coating on the top... this will now be the only way I'll make pumpkin pie!

Stuffed Peppers My Way

I saw this on the feature page yesterday and had to make these. They were awesome and I've never been a big fan of stuffed peppers. I took some of the reviews into consideration and did the following: I used red peppers and only roasted them for about 15 minutes as I prefer them tender, but not mushy. I wanted them to hold up and they were perfect. I also browned some very lean ground beef with the onions and then added the rice and some greek seasonings. Then I added some petite diced canned tomatoes, as it's not really the season for fresh and they were great in it. I topped with Feta cheese instead of adding it to the mix, but only because I didn't read it right. Minimal changes though - I'm sure it's GReAT as is. :)

World's Greatest Vegetable Broth

I made this to use for my Thanksgiving turkey stuffing. I added mushrooms because I love them. Going to chop and freeze the leftover roasted veggies to use in turkey meatloaf.

Crabless Chicken Cakes

I found this because I had leftover already cooked chicken from making quesadillas the night before. It's a fresh idea for left over chicken. I chopped the chicken breast in my food processor until it was pretty fine. This is key. I mixed it with egg, mayonnaise, garlic salt, paprika, and tarragon. I dipped the patties in egg and coated them in panko breading. pan fried in a non stick rachel ray small frying pan lightly sprayed with olive oil. I felt inspired to then put them on a baking sheet, cover them in marinara sauce, sprinkle each one with mozzerella and broil until the cheese was browned. They were good that night, and they were good as leftovers.

Slow Cooker Ham

I used a spiral ham and poured a small (8 oz)can of pineapple chunks and then patted on the remaining brown sugar. I'm aware that sprial ham is already cooked so I put it on low for only about 3 hours. I basted by spooning the liquid and pineapple over it every half hour or so. I liked it and I'm not really a fan of ham.

Roasted Chickpeas

These are great. I used less olive oil and cajun seasoning. Roasted them at 400 for almost an hour, shaking the pan every 10 minutes.

Slow Cooker Beef Stroganoff I

Made this last night for dinner and it thought it was wonderful! I took ALL the advice of JILLYBEAN14 and it was very tasty! The only thing I did different was used a low fat sour cream to add to the top. Perfect! Will make again!

Pear Honey Cranberry Sauce

Wow. I've never really been a fan of cranberry sauce. My family typically slices up a can of the jellied stuff. Not this year!! I made it last night and froze it. Subbed orange juice for the water, simmered everything (but the lemon zest and juice) for 15 minutes, then added the zest and lemon juice. It's VERY sweet and VERY tangy and absolutely beautfiul looking.

Poor Man's Pepper Steak

I really wanted to like this one but...I did not so much. Boyfriend didn't like it either. The steak was okay, not great, and the vegetables were way too soft and practically falling apart. It definitely was not worth the hour and a half it took to cook it. I think it would have been a much better plan to simply omit the flour and cook the steak on the stove, adding the onion, pepper, and garlic and just left it at that.
