Irish Chicken and Dumplings

This was very good, and yeah - quite a big time investment. It took about a half hour longer to cook the potatoes than the recipe states and the dumplings took longer too. I've got WAY more than 5 servings, so there's leftovers. Good thing it was really tasty.

Meatball Sandwich

I am so glad I went with the baguette instead of hoagie rolls on this. The roared garlic bread is a great touch. Actually, I used batard. The baguettes at my store were really skinny. I used the. Worlds best Marinara recipe instead of jarred sauce. Why ruin a great recipe with Ragu? Very nice!

Chicken Breast Cutlets with Artichokes and Capers

mega yum! Just made this for my boyfriend and he's starting to think I have a clue in the kitchen. I made it as it is here and served over orzo mixed with a little fresh lemon juice. I'm not sure if I messed up a bit on it, though, since the sauce was not thick at all. I split the recipe for 3 servings, and I may have accidentally used too much broth. I'm definitely making this again and paying better attention next time.
