Pineapple Zucchini Muffins

Excellent. I've made these several times this summer & we all really enjoy them. I do substitute 1/2 cup applesauce for 1?2 of the oil,(even used Peachy APPLesauce)and they were delicious also! ENJOY!!!

Chicken Scampi II

I used thin sliced chicken cutlets and cooked it on low and the garlic still burned. If you decide to use fresh herbs, you need to put them in a lot later or else they will burn too. Not bad, but not great either.

Beer Margaritas

These are a little too good. Make sure to pace yourself because they are so tasty and refreshing you'll be tempted to drink a lot (like I did). I had them a couple of weeks ago and I'm still recovering. lol

Braised Balsamic Chicken

Fiance said this smelled a lot better than it tasted. Weird sweet/sour thing going on. I used fresh garlic instead of garlic salt and fresh chopped tomatoes and basil. Not going into the normal rotation.

Easy Chicken Korma

This was delicious. My children, ages three and seven asked for seconds. It was easy to make and will definitely go into rotation as a weeknight meal. I served it over cous-cous.

Best Ever Banana Bread

This recipe was great!! Really moist and flavorful. As a Diabetic, I tried Egg Beaters instead of eggs, Splenda Brown Sugar Blend for the sugar, and Apple sauce for the oil. It made a little dense but still good. Topped with Sugar-Free Ice-Cream and an adjusted Bananas Foster II topping and I was in heaven. Thanks so much!!! Laureen Marie

Bananas Foster II

WOW!!! This was the BEST!!! I'm a Diabetic so tweeking this was essential, like substituting the white sugar for SPLENDA'S Brown Sugar Blend and I used Rum Extract instead of Rum. FANTASTIC!! I've made this a few times and Bourbon works as well. Thanks, Laureen Marie

Pecan Pie V

Definitely a keeper. Not too sweet and not bland at all, which is what I thought it'd come out to. Took another user's suggestion and used 3/4C light brown sugar and 1/2C splenda instead, came out just as tasty and felt a little less guilty. =)
