In 1681, King Charles II of England granted William Penn a section of land west of the Delaware River. Penn called this forested land Sylvania (Latin for “woods”). As a tribute to William Penn’s father, King Charles himself tacked on the prefix, making it Pennsylvania. One of the original Thirteen Colonies, Pennsylvania is known as the Keystone State because of its important role in forming the country. The Declaration of Independence was signed and the United States Constitution adopted in Philadelphia. Pennsylvania has contributed much to how Americans eat. Hershey and Heinz are headquartered in Pennsylvania and familiar throughout the country and much of the world. Pennsylvania is a major manufacturer of potato chips, pretzels, and other snacks. In Philadelphia, Italian immigrants created the Philly cheese steak and pepper pot, while Pennsylvania Dutch developed warm comfort foods like chicken pot pie and regional wonders like sticky buns, scrapple, shoofly pie, and the soft pretzel. The first commercial mushrooms were grown near Philadelphia in the late 19th century. Pennsylvania remains a major mushroom producer.

Light and Fluffy Spinach Quiche

This quiche was amazing! I brought it to a potluck and it was the most popular dish! I made quite a few changes though...I added shredded mozzarella/cheddar, ricotta cheese, light cream instead of mayo, garlic, arugula, roasted red pepper, carmelized onion, olive oil, fresh basil, oregano, crushed red pepper flakes, and salt/pepper

Easy Pesto

Five stars! Easy to make, tasty, and cheaper than buying it already prepared in the store or buying pine nuts. I followed PatiO's advice and decreased the oil and used a little water. You can't tell there's less oil. Also, ten minutes was too long for the almonds; the first batch ended up burned perhaps it was the toaster oven? The second time, I baked the almonds for 6 minutes and they were perfect. I think parmesan would be a nice addition but I don't need any more calories so I will wait and add it on top of my pasta. This is a definite keeper.

Lemon Cream Pasta with Chicken

You really have to baby sit the noodles. I left mine alone for 2 minutes and I had to soak the burned pan for 2 days. I salvaged the unburnt noodles and finished the dish. It was missing some kind of veggie in it.
