After-Thanksgiving Turkey Soup

made this last night since I was looking for a new use for the turkey carcass, other than the same old turkey noodle soup. This recipe is delicious, but I used a slightly different technique. After cooking/draining the carcass, I put all of the vegetables and rice in the broth and let them cook. When done, I added back in the turkey, a can of cream of chicken soup, and about 1/4 cup of gravy flour mixed in with water to thicken. Oh, and I put in a bay leaf when I'm cooking the carcass. This recipe has now replaced the old turkey noodle soup one. Very delicious!

Chicken Paprika

I loved this quick recipe! I used boneless skinless chicken thighs and sweated the onions and browned the chicken first.

Onion Roasted Sweet Potatoes

This was VERY good and quite easy to make. I did partially cook the sweet potato chunks in the microwave before tossing them with the oil and onion soup (to save time.) Will make this one again!
