The largest city in North Carolina and the largest between Washington, DC, and Atlanta, Charlotte is a major banking and investment center with all the amenities of a big city but a down home feel in its historic areas and leafy residential neighborhoods. So it's no surprise that you can find any type of cuisine in Charlotte's restaurants including Indonesian chicken and shrimp, fish tacos, grilled tuna steak, creme brulee, and much more. But you needn't look far to find regional classics such as fabulous fried chicken, hush puppies, Brunswick stew, whole pig pit-cooked barbecue seasoned with vinegar-hot pepper sauce. Then cool down with a local cherry soda or sweet tea.

Ham and Swiss Casserole

The rating is a compromise between my kids (5 stars) and my husband (3 stars). I skipped the veggies 'cause the kids are picky, and added a bit of curry powder. I liked it a lot and it was easy (I even bought cubed ham at the grocery), but my hubby is more of a meat-and-potatoes kind of guy. Thanks for the recipe!

Baked Beef Stew

I loved this stew and would personally give it 5 stars, but my husband thought my other recipe is better, so I compromised with 4. I love being able to stick it in the oven and forget it, and somehow I like the texture of the meat better than my crock pot recipe. Like others, I like the corn starch substitution. Try this recipe and figure out what tweaking your family prefers - you won't regret it!

Apricot Chicken with Balsamic Vinegar

I didn't have dried apricots but I did have 3 fresh peaches on hand. I also used fresh sage. It's a keeper! Balsamic and fruit are a great combo.
