Before the American Civil War, there was only one Virginia. However, when most of Virginia seceded from the Union in 1861, the northwest portion chose to stay put. Even before the war’s conclusion, newly formed West Virginia was rewarded with statehood, making the Mountain State the 35th to enter the Union. The Mountain State is deftly nicknamed, as it lies entirely within the Appalachian Range. Farming in West Virginia is difficult because of the rugged, mountainous landscape, but hunting is a popular activity, and game meats and fish have been important parts of the diet going back to the days when Native Americans had the rugged terrain to themselves. The brook trout is West Virginia’s state fish and the Golden Delicious apple (a variety first developed in Clay County, West Virginia) is the state fruit. Apple butter (made with apples stewed in cider with sugar and spices) is another West Virginia favorite.

Raisin Cookies

These are excellent cookies! I did make a couple changes, however. I didn't have any shortening or real butter so I substituted 3/4 cup canola oil and added 1 teaspoon vanilla extract. After adding the milk the batter was too thin to make drop cookies so I just poured the batter into a 9 X 13 pan and baked them until they were light golden brown. Delicious!

Ultimate Twice Baked Potatoes

VERY GOOD POTATOES!!! I added some cream cheese because it seemed dry. Also, I got frustrated because the potato skins kept falling apart so I just made a 13 X 9 potato casserole.

Honey Bun Cake I

First time making this and took to Thanksgiving gathering. It was a HUGE HIT! As others suggested, I used cinnabon frosting & baked in bundt pan. The aroma is incredible as it bakes. Make it & have a cup of coffee ready when it comes out of the oven. Thank you!
