Pumpkin Bread IV

Reviewed: Dec. 2, 2008
DELICIOUS!! I use an entire 29-ounce can of pumpkin... the flavor and texture are perfect! I also use unsalted butter to grease my pan. The smell that fills the kitchen while this bread is baking is wonderful! Thanks for a fantastic recipe!

Korean BBQ Chicken Marinade

Reviewed: Dec. 2, 2008
Oh wow! My first marinade from this site and it definitely is good! I've been wanting to make my own rice/noodle bowls for some time. Used Sriracha hot sauce and lime juice instead of lemon. Next time may add a bit of cornstarch or flour to thicken the sauce a bit. Served over this site's Ginger Broccoli Stir-Fry and udon noodles. This recipe will be a regular dish here.

Ginger Broccoli Stir-Fry

Reviewed: Dec. 2, 2008
Needed a basic broccoli stir-fry recipe & this one is definitely a good one. I didn't add the soy sauce as I was using this site's Korean BBQ Chicken Marinade. Served broccoli under marinaded chicken over udon noodles. I'll be making this broccoli again and again with other sauces. May use fresh ginger next time.

Barbie's Tuna Salad

Reviewed: Dec. 1, 2008
Really diggin' this recipe. Although I would make the following changes: used 1/3 of the mayo the recipe called for, doubled the Parmesan cheese, fresh parsley instead of dried, fresh green onions instead of the onion flakes and my oh my! What a delicious salad.

Perfect Turkey

Reviewed: Dec. 1, 2008
I made this for Thanksgiving and it was pretty tasty however My mother in law made a beer can turkey that she injected with seasoning and it was a lot juicer and moist than mine. A little dissapointed but all in all pretty good

Lentil Burritos

Reviewed: Nov. 30, 2008
Instead of dried onions/garlic, I used fresh. I placed maybe .5 tb of olive oil in a hot pan & sauteed the fresh diced garlic & onion in pan for a couple of minutes, then added the other 4(of the 6) ingredients. Also sauteed the zucchini in a separate pan with a bit of olive oil & added sea salt. Used Sriracha for the hot pepper sauce. I'll definitely make these again maybe using chopped jalapeno peppers--very tasty burritos! Served burritos with a bit of Mexican cheese(queso fresco) instead of mozzarell' & a bit of cilantro.

Apple Squares

Reviewed: Nov. 29, 2008
Alterations: used half whole wheat/regular flour, half of the sugar(both brown & white), two cups of chopped apples instead of .5 cups. Smelled amazin' as it was bakin'! I would definitely recommend using 1/2 of the sugar/cinnamon mixture--recipe calls for way too much sugar here as well. Next time I'll definitely be cutting it down & maybe using all whole wheat flour. Twas my first time using whole wheat & I must say it's not bad at all. Also, baked 'em for 35 minutes.
