Mom's Traditional Creamed Onions

This is ok if you completely leave out the onion water, or boil it down to a few cups or so. However, those who are searching for a satisfying version of what they remember from several holidays ago will not find what they are looking for here. Try 1 Tbsp each of butter and flour, and use 1 cup of half and half, or (maybe) cut the half and half with whole milk, but low or nonfat milk just won't do. And add just a touch of nutmeg. It's the secret ingredient... Hey.. since when can a dish like "creamed" onions be made low fat? ;^}

Peanut Butter Banana Muffins

You'd be surprised what 1/2 tsp of salt will do for this recipe. Mix it with the other dry ingredients and you're good to go. Major oversight when writing this recipe.

Easy Granola Bars

This recipe was a good starting point. I made it vegan by using 2 mashed bananas instead of the butter, coconut milk instead of sweetened condensed, and agave to sweeten. I had to use more nuts (chopped walnuts, almonds, and a few brazil nuts instead of sliced almonds) and added chopped dates. This is a very versatile starting place for really good, healthy granola bars.
