Sitting in the southwest corner of the state, San Diego is where California began, originally claimed in the name of Spain by Portuguese explorer Juan Rodriguez Cabrillo. With an average annual temperature of just over 70 degrees, everyday is a good day for a trip to the beach or a farmer’s market. The beaches are everywhere and you are likely to find a market somewhere just about any day of the week—and year-round, no less. The city’s restaurants offer everything from casual takeout to four-star dining, with the fish taco as the local favorite. You haven’t truly experienced eating in San Diego if you haven’t enjoyed one of their deep fried, battered fish wrapped in a corn tortilla with cabbage and sauce.

Mini Cheesecakes I

Wow! We made this for a 4th of July BBQ, and I have never seen a dessert go so quickly! People were pulling them off the tray as my husband went outside to set them out. I used graham cracker crust instead of the Nilla Wafers, and managed to get 24 Mini Muffin size and 5 Large Muffin size out of the batch. Will probably be required to bring these to the next family get-together!

Greek Orzo Salad

I toasted the orzo with garlic and sea salt then added chicken broth to cook it. The result was flavorful and I didn't really need to add much artichoke oil.

German Chocolate Cake Frosting II

Happy Birthday to my hubby! German chocolate cake is his favorite so German chocolate it was :) I personally am not a fan of this cake/frosting but according to him this is 5 stars! He says its better than the store bought frosting. I took a lil taste and had to agree. The only thing i did differently was reduce the sugar to 3/4 cups, which still seems like alot. Condensed milk with all that sugar and butter...geeeeez! I think my arteries were clogging as i was making this! I, like others, decided to add 1 TBS cornstarch with 1 TBS water to thicken it up a bit. It thickened up perfectly!
