Downeast Maine Pumpkin Bread

Great bread! Good balance in pumpkin and spice flavors. I doubled this recipe because I had a 30 oz can of pumpkin, but it was too much for my 5 qt mixer.

Slow-Cooked Short Ribs

I made this recipe basically "as is" the first time, with the exception of not flouring or browning the ribs first. I also baked for 3 hours at 325 degrees instead of using a crock pot (as one reviewer suggested). They turned out great! Fall off the bone tender. Everyone loved them! They are not super spicy, so if you like a bit more "kick" to your ribs, I would increase the amount of chili powder.

Pumpkin Chocolate Chip Muffins

This tasted really yummy. I took other reviewers' advice and upped the spices a little and substituted applesauce for oil. I think I cooked them a little too long (just over 15 minutes for mini muffins) so next time I'll bake them for less time. I might add a little more applesauce too, to make them a little more moist. Thanks for a great recipe!

Baked Spaghetti I

This was really good! I was pleasantly surprised, and my husband and daughter liked it as well. I left out the green pepper as I'm not a fan at all, and I did do half ground beef, half ground sausage, and added some eatra seasonings, including garlic and fennel. I was a little worried about the spaghetti being dry, so I added a little extra milk to the cream of mushroom soup, and added that to the noodles in two layers, rather than just all on top. I really liked the way the soup made it taste. I'll definately be adding this to my monthly family dinners. I think next time I'll try it with fresh mushrooms.

Perfect Baked Potato

I was really impressed with this baked potato. I've never been very good at baked potatoes, and these still didn't turn out perfectly, but most of that was probably my fault. I used 2 huge potatoes, and since I didn't have 2+ hours to bake them, I put them in the microwave for 6 minutes, and then baked at 325 for 1 hour 15 minutes. My husband said his was great, but mine was still a little firm in the middle. However, the skin was fantastic, and that was what I was looking for, as I really wanted to duplicate the potatoes my husband and I get at Outback Steakhouse. This was definately the closest I've come to that so far. So thanks for a great recipe, I'll be using it a lot from now on.

Sauteed Garlic Asparagus

Pretty good - I didn't cover, and cooked it for probably close to 15 minutes. Added a little sea salt, and my husband and I both enjoyed it. A nice change from steamed asparagus, though it was kind of greasy, and that was after cutting the butter in half.

Ground Beef Mexican Style

Pretty good! I made a lot of changes though, based on making it healthier and the ingredients I had on hand. 1) I used ground turkey instead, and used 1.5lbs. 2) I used 12 oz of Healthy Harvest Egg noodles. 3) I added 1 can of corn. 4) I used light sour cream. 5) I added 1/2 a pack of fajita seasoning and some extra cayenne pepper 6) I transferred everything into a 9x13, topped with organic blue tortilla crumbles (2 oz) and cheese (2% milk, 1 cup) and broiled for a couple of minutes 7) Made to serve 6 instead of 4 b/c of added noodles and meat 8) Topped with tomato and green part of green onions I think that adding black beans would be good as well but I didn't do that this time. 1 serving was 540 calories, very filling.

Roasted Vegetables

Delicious and easy! The only changes I made were that I used regular potatoes instead of Yukon Gold and the only squash I had was butternut so that was all I used and I used a good amount; the BF loves squash!

Feta Cheese with Basil Salad

This was delicious! I've made it twice now and it's turned out perfectly both times! The only changes that I have made is that I used an oil and vinegar dressing just because I was trying to use it up and have one less bottle of dressing in the fridge. This salad is really good, especially if you let it sit a bit before you eat it. The dinner party I took it to devoured it, and there was 4 of us though the recipe is for 6! Compliments all around! Tastes great and easy to transport and take to parties and potlucks and things!
