Sweet Potato Rolls

Squash Dip

If you like goat cheese and butternut squash, you'll love this dip! I served with sliced baguette and substituted roasted pine nuts for the walnuts. Also added a little bit of salt. For a more mild flavor, you could substitute cream cheese for 1/2 of the goat cheese. Very beautiful appetizer. Lots of great comments!

Swiss Chard with Pinto Beans and Goat Cheese

Absolutely DELICIOUS!!! One of my new favorites! I used black beans instead of pinto and did up the Red Pepper flakes to make it a little more zippy. Served over whole wheat pasta. Yum!

Dairy Free Chocolate Pudding

I REALLY enjoyed this pudding recipe and it was so simple! And vegan! I did increase the sugar to 1/3 cup and also added an 1/8 tsp of orange extract which gave the pudding a wonderful 'chocolate orange' flavor. Yum!

Spicy Southwestern Slaw

I love this recipe! My family enjoys this with tortilla chips more than salsa. To make it a bit easier without all the slicing and dicing, I use packaged cabbage with the carrots, etc. already in it...this saves time on chopping.

Easy Mashed Potato and Roasted Vegetable Enchiladas

I made these for a couple who just had a baby as an easy casserole dish for them to throw in the oven. While I didn't taste it, they said they loved it and it was the perfect comfort food they needed!

Zucchini Herb Casserole

Really glad I read the reviews! Based on other's suggestions, I doubled the rice and doubled or trippled the herbs and spices and garlic. I also added a green pepper to the zucchini mixture. Rave reviews at the dinner table and a second helpings all around!
