Cheesy Potato Salad

Yummmmmy! I made it with just a pinch of sugar, and it was so nice. A nice change of pace for a potato salad, and great with various grilled meats.

Cassie's Zucchini Brownies

Awesome! I added semi-sweet chocolate chips (about a cup I think) and they turned out soooo good. They were a little bit cakey, but that made them a little easier to send in school and work lunches. The best part was, nobody knew there was zucchini! My husband didn't even know until he happened to see a little piece of green in one bite.

Chicken Kabobs Mexicana

So good! I didn't have any tomatoes, but they were so yummy even without them. We added a little bit of extra cilantro and used a sweet white onion. I'll definitely be making this many times- fast, easy, healthy and delicious!

Robbi's M&M Cookies

These were PERFECT. We made them as the birthday treat for my son's Kindergarten class. I made them a little large (a little bigger than a walnut probably) and put them on a popsicle stick. They took 10-11 minutes to bake and were beautiful with holiday m&ms. Super easy, pretty and YUMMY!

Southwestern Black Bean Stew

Awesome! So fast, so easy, and so yummy. The only thing I did different than the original was to add a can of diced tomatoes and a can of garbanzo beans. I think I also added more liquid (beef stock) than called for but that's just our family's preference. My kids (5 and 18 months) both had seconds! And my older son is requesting it for his birthday dinner this weekend... so you KNOW it's good!

Golden Chocolate Chip Cookies

Okay, I'm an Equal Opportunity Cookie Lover, but this one just doesn't work for me. I read the reviews and then proceeded because I only had one stick of butter. The batter is good- tastes good and looks good. I tried baking the cookies a couple of different ways. I tried semi-flattened teaspoonfuls on a Silpat for 10 minutes. They all spread almost completely flat, some were all the way brown, others weren't. I let them cool on the pan then transfered to a wire rack- they all ended up droopy like they were half cooked. So I did another batch of 1/2 tsp sized non-flattened on a regular cookie sheet for 8 minutes. They ended up looking more like the picture- though they are still bendy (not chewy- bendy) and almost raw in the middle. I was going to serve them to a afternoon guests, but I think I'll be serving them a fruit tray instead.

Sweet and Crunchy Salad

This was really good- and fairly easy to put together. I used one chicken and one oriental ramen package, and soaked them for about 10 minutes. I also substituted slivered almonds for the sunflower seeds and cashews. I thought it was really great, my husband said he would eat it again, and my 5 year old wouldn't taste it more than once. I'll be adding some bite sized chicken to the leftovers to use as a lunch salad.

Thai Tuna Burgers

This just didn't work for me, and I followed the recipe to the letter. I had high hopes, and it just fell flat. They had an odd taste to me, and didn't hold together well. Oddly enough, my 5 year old loved it. I wish I could say I enjoyed them more, but not even sure what I could do to improve the taste.

Chap Chee Noodles

Really great- I've never had the traditional version, but this really is a great recipe. I used rice noodles because that's what we had in the cupboard. I also added some broccoli and used bok choy instead of cabbage. I did double the marinade and the sauce. Everything had a really great, mild flavor- perfect for us because of our small children. My husband added some red pepper flakes to his, but he said it was really just fine without them as well. Definitely a keeper- goes together in a flash once you have all the veggies prepped.

Mayonnaise Biscuits

Fantastic! I've never had luck making biscuits from scratch, but this one is foolproof. My preschooler helped me out and we were both so proud. I used regular flour with the addition of 1 Tbsp baking powder and 1 tsp salt. We served it with a chicken stew and it was just right, with a few left over for breakfast.

Zucchini Bread

This was an okay recipe- perhaps I'll try tweaking it to fit what I wanted. It was a bit too sweet and the texture was a little bit different than I was looking for. I did like the sour cream and chocolate chips, and my 4 year old likes it... so it'll be a keeper for now.

Chocolate Chews

This was really a yummy cookie! It was easy to make and a little bit different- a great way to get a chocolate fix when there isn't any cocoa powder in the house. They were easy enough for my 4-year-old to help with. We made small cookies- about walnut sized balls of dough- and they were just perfect. I'm thinking of making a Halloween version using licorice to make spider legs just after I take them out of the oven. I did cook them around 9-10 minutes because we like soft cookies.
