Addictive Pumpkin Muffins

I cut this in a third of the original recipe. I used two full eggs, instead of the 1 1/2 the scaled down version called for, used apple pie spice and added a packet of instant apples and cinnamon oatmeal. I also cut the sugar in half. Just cutting this recipe down made 13 medium sized muffins. They smell fantastic. I'll update this review tomorrow as to how the family liked them.

Chicken Salad in the Tropics

I thought the dressing for this salad was really gross, the sesame oil was WAY to overpowering, so i through out the dressing and completely started over, omiting the sesame oil, cutting the soy sauce in half, and also, leaving out the pepper, and even with that i still wasn't happy with the dressing. The salad was overall, just ok, nothing special, i would prefer a salad with ranch dressing and just some plain old grilled chicken over the top before i ate this one. BUT, my hubby loved it and scarfed it down, and finished mine, so i am giving it 3 stars, because i hated it and he loved it, so i found a happy medium.

Candy Cane Cocoa

These. Are. Rockin'! I think that those who had trouble used granulated sugar, when it makes more sense and is easier when you use powdered sugar. Yum.

Mama's Ambrosia

I make myself a small batch of this a couple times a year just for the comfort that's there for me. My mom made this for almost every holiday when I was growing up. She used half sour cream, half whipped cream and she also added a couple chopped bananas. TIP: To keep your bananas from browning, toss the banana pieces in a little lemon juice before adding to the salad.

WWII Oatmeal Molasses Cookies

This is a simple cookie, but delicious. My Grandma made cookies very similar to this when I was growing up and she'd tell me stories about her childhood. I make them now to be closer to her and to pass down the same memories to my children. These will be dear to me for that reason.

Oatmeal Banana Nut Bread

I used butter in this recipe and I added in a couple handfuls of chocolate chips and walnuts. This will be nice to hand out for Christmas. TIP: Toss the walnuts and chocolate chips in a little bit of flour and gently stir in in at the end. Keeps them from sinking to the bottom.

Pita Pizza

I make these when I can find pitas on the clearance rack at my local grocery store. I like mine with EVOO, garlic, fresh basil, tomatoes and fresh parmesan. The kids are a little more traditional with homemade pizza sauce, pepperoni and italian blend cheese. It really is the best on the grill, but it tastes pretty good just out from under the broiler.

Addictive Sweet Potato Burritos

My new favorite recipe! I made only 6 servings, and still had a lot of filling leftover. I'll use the leftover filling to make quesadillas or empanadas later this week. Next time I make this, I'll add cilantro too.
