Chicken Enchilada Casserole II

I had some leftover chicken from a rotisserie chicken we'd bought at the grocery store and believe it or not we had made cornish game hens that had some leftover meat as well so I was looking for a recipe that I could use that up in. This worked out great and even better was that I had all the other ingredients on hand! Only thing I didn't have was the chili beans..so used about 1/2 cup drained canned pinto beans. Just wonderful. Really recommend using crushed tortilla chips on top, we all the loved the crunch (left out two of the tortillas)! This was easy, quick, filling and tasty too!

Filipino Lumpia

These were a great hit at our daughter's graduation party this past weekend. I had tried making them a couple weeks ago just as a trial run to make sure I could do it and while it did seem kind of tedious and time consuming rolling them it was SO worth it for the enthusiasm everyone devoured them with. Of course even when it's good I have to tweak things for the fun of it and the second recipe we tossed in 1/2c finely chopped russet potato with the vegetables careful that we didn't let them get overcooked. Then, also, at the end added about 2/3c frozen peas that just cooked as much as the heat left in the mixture would do and they were perfect. I think I liked the second recipe more but hey...either way was totally wonderful. We did kind of a luau/asian menu for the party and these were THE hit! Really nummy.

Italian Baked Cannelloni

I really enjoyed this recipe and found it to be easier to prepare than expected. I made a few changes: I only used about a tablespoon of olive oil in the beginning, I added garlic with the onions, I drained off the fat before adding the wine and I only added 8 ounces of mozzarella. For those of you that found their cheese sauce to be too runny, it was because you didn't allow the sauce to thicken up. It's best to bring the butter/flour/milk mixture to a boil over medium heat. This process should take about 15-20 minutes to make a really thick sauce. I ended up using Yellow Tail Pinot Grigio and just a jar of spaghetti sauce. It turned out great!

Almond Bars

I've made 3 batches of Almond Bars so far, and each one has been perfect. It's a very easy recipe to follow, and it's very flavorful even though it doesn't have a lot of ingredients or complicated steps to follow. For one batch, I sprinkled about a 1/4 cup of almonds on top of the batter before baking, and it was just the perfect touch (even though the recipe is wonderful as is). It's definitely a keeper.

Tamra's Lemon Artichoke Pesto

As a pesto on pasta, this was too strong for us. As an overnight marinade for some chicken thighs that we broiled, it was great.

Bourbon-Mango Pulled Pork

All the liquid had boiled off long before I checked on mine after 7 hours on low. I also only needed to cook it an additional 30 minutes instead of 1-2 hours after making the sauce. It still turned out delicious, but next time I will reduce the cooking time in the first step.

Green Beans With Walnuts

Yummo. Just a few nuts and some green beans and yet somehow seems so special. We totally loved this and I know we'll be making it again and again. I do think it was key that the nuts were really toasty so don't skip on that! Thanks for the recipe Tina :)

Pumpkin Black Bean Soup

This was excellent the first day and even better as leftovers. The ham adds nothing. I think it would be fine without any meat at all; if I were to add meat again next time, I would try some shredded beef.

Pineapple Ham Loaf

Never heard of a hamloaf before this. I had leftover ham to use up so I made this. The only change I made is used 1lb maple sausage. My father and husband loved it.Good thing, we've been having leftovers for three days.

Shamrock Pie

I have this recipe in its entirety, even the mysterious omitted ingredient--butter. My recipe called 'Shamrock Pie' calls for 1 tablespoon of butter. And my recipe is identical in every other way (ingredient quantities are exacty the same, and the cooking instructions are exactly the same as well, step for step). Perhaps this will help some of those (understandably) confused chefs!

Asian Chicken Noodle Salad

my oh my! I had NO idea I would like uncooked bok choy so much! This recipe is just perfect as it stands (is that really me saying that?? lol) Toasting the noodles, sunflower seeds and pine nuts was inspired! I considered spraying them with butter flavored nonstick spray but didn't do it (this time). There are lots of variations that would be fine with this salad, using left over bbq pork, or sugar snap peas instead of the snow peas, adding a few bean sprouts, or some shredded carrot or as other reviewers have done substituting cabbage. I made sure to use fresh lemon in the dressing because it makes such a difference in the brightness of it. All I can say is YUM. Now I'm wishing I would have doubled the recipe because they practically licked the bowl haha
