They make an absolutely fabulous side dish to prime rib, and have become a tradition every year at family holiday gatherings! To save time, the caramelized onions can be made ahead of time and refrigerated, then warmed before adding to the potatoes.

Who Jansson is, we may never know, but this meal is an absolute must on a cold and frigid evening. The anchovies may seem an odd ingredient in what is basically potatoes au gratin, but when they combine with cream and onions, they'll tempt anyone!

Looks similar to colcannon, but champ is native to the North of Ireland. It's made by blending scallions or green onions with creamy mashed potatoes. Great on it's own, served steaming hot with extra butter which will melt through it. But it's also the perfect side dish for good quality sausages.
